We started the 100% Single Varietal Series with an idea: To reserve part of each of the elements of our award winning blend "The Stag" from the 2018 harvest so that we could host a blending seminar for our wine club members- allowing them to create their own version of The Stag. On a whim, we decided to enter each of the varietal wines into the Houston Livestock Show & Rodeo International Wine Competition to see how they would perform. It is an understatement to say that they performed "well."
Hand punch-downs during fermentation and aging in French and American Oak (17%) for a stunning 22 months have created a luxury wine that is dark with dense fruit flavors and layered with hints of oak and spice. It has aromas of blackberry, black cherry, and anise, with toasted oak notes and dark mocha on the palate with a long chewy finish.
We suggest pairing this wine with French dishes like Beef Bourgogne or soft and delicate French cheeses like Delice de Bourgogne. This wine does require decanting for a minimum of one half hour. It will also age gracefully until 2035 at a minimum if you choose to acquire more bottles for your cellar.
