Like Malbec, Cabernet Sauvignon has proven itself a worthy cultivar in the high altitude, sun parched, rocky soils of Mendoza. Due to modernizing of farming and winemaking techniques, the quality of Cabernet Sauvignon has increased exponentially over the past decade to reveal a quality and freshness that often rivals Cabernet Sauvignon from anywhere else in the world.
Testamento is 100% Cabernet Sauvignon- a pure wine with no other grape varietals blended in. The wine was aged for 8 months in new French oak and then aged one year in the bottle. It is an intense wine with aromas of blackberry, cherry, and violet. On the palate, it is full bodied with flavors of chocolate covered cherry cordial, black currant, cedar, and a slight hint of eucalyptus. We suggest pairing this wine with sumptuous meals like braised beef short ribs, ribeye steak, or soft and ripe cheeses like camembert or triple cream brie. This wine will age well and is cellarable for five to seven years.
